Potatoes are the perfect frugal ingredient. They are healthy, versatile and super cheap. I have gathered up some cheap potato recipes so that you can include this healthy ingredient in more of your family dinners.
Some of these recipes are for regular potatoes and some are for sweet potatoes-since both kinds of potatoes have health benefits and are very cheap to buy.
Potatoes are on EWG’s dirty dozen list-meaning they often have a lot of pesticide residues. Even so, I don’t always buy organic and think buying organic is a decision that requires some thought. However, the good news is that if you decide to buy organic potatoes they are usually still cheap!
Potatoes contain many vitamins including B6, vitamin C and potassium. Sweet potatoes contain even larger amounts of vitamin C and vitamin B6. They also have more than 100% of the RDA for vitamin A. (This is not the vitamin A found in fatty fish but that is a story for a different day.)
Healthy and Cheap Potato Recipes
These recipes cover all the bases. First of all they are super cheap and healthy. Secondly, most of them are very simple and made with basic ingredients.
This recipe includes thyme which is one of my favorite spices. I like the way thyme tastes and I love that it is a natural progesterone maker. Most of us could use more progesterone!
These twice baked potatoes have a good amount of protein (especially if you use a lot of cheese!)-so they could be a main dish. Add some vegetable sides and you have a full meal. If you wanted to add more protein to your meal, you could add a recipe with beans. That way you would have a super frugal meal that was well balanced!
These are a main dish and Stacey recommends saving the scooped out sweet potato for another recipe. But, I am not low carb and for convenience and cost, I would just eat the sweet potato. 🙂 Either way, these are full of yummy ingredients like beef, tomatoes, taco seasoning, and zucchini.
This soup could easily be a main dish. Add a salad and you would have a yummy nourishing meal! This is super frugal soup-especially if you use homemade chicken broth. I recommend making your own chicken stock because it is super healthy (and doesn’t contain msg like almost all the chicken stock in the grocery store.) Plus homemade chicken stock is super cheap!
This is a frugal main dish with beef, potatoes, sweet potatoes, carrots, and rutabagas. This is another recipe that calls for chicken broth. This dish has plenty of protein so I would recommend eating it with a salad or another non starchy vegetable. That way you could get more veggies in and cut the cost of the meal. Frozen vegetables are especially cheap!
These instant pot loaded mashed potatoes are made with ingredients like butter, cheese, and bacon. What’s not to like?! Plus they are quick since they are made in an instant pot.
Healthy Sweet Potato Casserole is a healthy version of the traditional classic. The base is sweetened with apple juice and maple syrup. The topping is oats, nuts, coconut oil, maple syrup and spices. The nuts are an expensive ingredient, but there is only a cup in the entire recipe.
The maple syrup can be a little pricey too, but I get mine for a great price at Walmart. Actually I get my pecans and maple syrup at Walmart. I order online because Walmart has free 2 day shipping on orders over $35! I go to Ebates.com first because I can get a percentage off from Walmart that way. (They give me cash back for my purchases and send me a check once I have earned a certain amount.)
